Ębleskiver
(Recipe used for
Elk Horn's Tivoli Fests)
12c flour
1½ c sugar
1 T salt
½ c baking powder
2 T baking soda
24 eggs, separated
3 quarts buttermilk
Mix flour, sugar, salt, baking
powder and baking soda. Add egg yolks and
buttermilk. Whip egg whites and add last. Fill
ębleskiver pan cups one-fourth full of Mazola oil before
filling with dough. Fry until golden brown, turning
often. Recipe can be halved.
